BONELESS PORK ROAST

This was submitted by Jenn but is from the Joy of Cooking cookbook. Serves 6-8 people.



Boneless pork loin is best slow-roasted, but it is difficult to give exact cooking times,
since pork loins vary in diameter. In general a 3-pound boneless pork loin should
take 1 ¼ to 1½ hours total cooking time. If the roast is very small, less than 2 inches
in diameter, check the internal temperature after it has cooked at 250 for 30 min.
Otherwise, begin checking at 45 min. For the best results, test for doneness with a
thermometer.

 - Preheat oven to 500 F. Mix together:
1 T olive oil
1 T dried Thyme
1 tsp salt
½ tsp black pepper
 - Rub evenly over the entire surface of:
1 boneless center-cut pork loin roast (about 3 lbs)
 - Place meat in baking dish. Roast for 10 minutes. Reduce the oven to 250 F and roast
until a thermometer inserted in the thickest part of the meat registers 150 – 155, 1 - 1½
hrs (the temperature will continue to rise about 5 to 10 degrees out of the oven). Remove
to a cutting board, cover loosely with aluminum foil, and let stand for 10 minutes.
