GORDY'S HONEY WHEAT BREAD

5 cups warm water
1/2 cup honey or molasses
2 Tbsp. salt
1/2 cup oil (I use cold-pressed virgin olive oil)
#1 6 cups whole wheat flour
3 Tbsp. instant yeast
#2 7-9 cups white flour (or use all whole wheat flour)
1/2 cup whey powder
1/2 cup powdered milk
1 cup applesauce

Combine warm water, honey, and oil in bowl. Add first amount of flour and mix for 30 seconds The flour will cool down the water for he yeast. Continue mixing dough while adding the yeast. Add applesauce to dough. The sift salt, whey and milk powder with #2 cups flour. Continue adding flour until the dough clings to the dough hooks and cleans the sides and bottom of bowl.
Grease loaf pans. With oiled hands, remove dough and form into loaves. Let rise in warm place until double in size.
Pre-heat oven to 400 degrees. Put loaves in to bake and turn oven down to 350 degrees for 30 minutes. After 5 minutes run butter on top of loaves.
